It was born in 2006 by the request of Maestro Luciano Pavarotti to produce a unique object, to be proposed at a charity auction of his Foundation. The Giusti family then creates Lo Scrigno (the chest), a fine wooden box containing the entire Historical Collection in the classic Champagnotta format, in combination with five fine Balsamic Vinegars aged in individual barrels of Oak, Cherry, Chestnut, Mulberry and Ash.

1 bottle ‘UNA MEDAGLIA D'ARGENTO’ 250 ml
Characterized by a rich scent and a good and round balsamic acidity, ‘Medaglia d’Argento’ represents a strongly aromatic product, able to enhance with its intensity the flavour of the dishes which it is added to. To be used both raw and in cooking.
Ingredients: cooked grape must, aged wine vinegar.
Aging: in French oak barrels of the 1900s with the addition of already aged balsamic vinegar taken from batteries of century-old barrels.

1 bottle ‘DUE MEDAGLIE D’ORO - IL CLASSICO’ 250 ml
A historic product of Acetaia Giusti, ‘Il Classico’ is a balsamic vinegar of great versatility, both for use in cooking and directly raw. With a good density and an excellent sweet and sour balance, it is characterized by hints of ripe fruit and notes of liquorice and black pepper.
Ingredients: cooked grape must, aged wine vinegar.
Aging: in oak barrels, with the addition of already aged balsamic vinegar, taken from batteries of century-old barrels.

1 bottle ‘TRE MEDAGLIE D'ORO - RICCARDO GIUSTI’ 250 ml
Dedicated to the ancestor that invented the recipe at the beginning of the 20th century, it comes from musts of ripe and dried grapes. Flavours of plum jam and red fruits jam blend with hints of honey and vanilla in this balsamic vinegar of high density and sweetness, perfect for raw dressing of various different types of preparations, from sweet to salty.
Ingredients: cooked must of late grapes dried on trellis; aged wine vinegar.
Aging: in oak barrels, with the addition of already aged balsamic vinegar, taken from batteries of century-old barrels.

Born to celebrate the 400th anniversary of the Giusti family, the ‘Quarto Centenario’ is an extremely full-bodied balsamic, rich in aromas and scents of ripe fruit accompanied by notes of tobacco, toasted coffee and wooden scents that derive from the long aging.

Aging: in batteries of ancient barrels dating back to the 1800s-1900s. Collection of a limited quantity only once a year.

Pride of Acetaia Giusti, ‘Banda Rossa’ represented uncle Giuseppe’s personal gift to the current members of the family. Of great body and thickness, it stands out for an unmistakable complexity and aromatic richness. Among others there are notes of plums, black cherries, and a sweet aromatic hint infused by the ancient woods in which it has rested, which lasts long after the tasting.
