Nose: Fruity (Mirabelle, quetsche) and cereal (oatmeal, orgeat), a hint of anise and cinnamon appear first gently, as sprinkled. Then the fruits make a noticed return, well accompanied by quince paste. With more aeration, the red fruit jelly (raspberry, strawberry) and milk caramel candy enrich the aromatic palette.
Palate: The pasta of pear and plum fruit marks the attack, at first warm and spicy (chilli). Herbaceous notes (dry grass) and the bitterness that accompanies them often follow. The mouth is then adorned with a new complexity.
Finale: The fruit fades, the flesh gives way to the skin: that of a freshly peeled pear comice, with its granular appearance. The spices take hold of the mouth again, but they are softer and accompanied by a slight astringency.
