CHINON rouge is the main cuvée of Château de la Grille. To maintain its level of excellence, the most difficult vintages are not bottled to retain only the best.
Harvested by hand in mid-October, destemmed, the grapes fall by natural gravity into thermoregulated stainless steel vats and equipped with pegging for better extraction of color, aromas and tannins. After about 3 weeks of maceration, the wines are separated from the marc (skin, seeds and pulps) before the malolactic fermentation. Aging for 12 months in barrels (50% of the vintage) and in tanks allows the tannins to melt, preserving the fruit. Finally, the wine is put in special bottles, reproduction of a Champagne bottle from the 18th century to complete its maturation for almost two years at a low and constant temperature.
HISTORY OF THE VINTAGE:
The 2015 vintage is a great classic. Early, it allowed a nice maturity of our Cabernet Francs while keeping the freshness and the fruit which make the reputation of VAL DE LOIRE.
