In 2007, Ichiro Akuto, the grandson of the founder of the Hanyu Distillery, started a new chapter in the history of whiskey in Japan by building the Chichibu Distillery.
Located about 70 km northwest of Tokyo, production began in February 2008.
The equipment includes a small mill, filter tank, Japanese oak (mizunara) fermentation tanks and a pair of small copper stills made by Forsyths of Rothes in Scotland.
Several different types of casks are used, including Bourbon, Sherry and Hogshead casks, all aged in a traditional Dunnage-style warehouse.
Reinforced by their environment, Chichibu whiskeys are unfiltered and uncolored.
